HEALTHY banana bread recipe

As long as I can remember my family has enjoyed making banana bread but I have recently developed my own healthy banana bread recipe. I don’t know about you but in the last few years I have struggled to keep my figure. For the past several weeks I have been developing my banana bread recipe healthy version. I have been testing my breads on my husband’s coworkers until I feel the recipe is perfect. They haven’t seemed to mind!

When I was growing up in central Arkansas as a child, one of my favorite treats was coming home from school and having my mom’s homemade banana bread. My mom’s easy healthy banana bread recipe was a staple in our home. She would usually make 16 mini loaves at a time. With 4 kids and a husband who all loved baked goods, those loaves would be gone in a couple days. My favorite thing about her recipe is that it was so moist because she would always use extra bananas. Some recipes can be a little dry.

My grandmother also has a simple healthy banana bread recipe and makes hers in a bunt cake pan. I have always enjoyed having her bread and think it looks exceptionally pretty in the bundt shape. I wanted to incorporate that detail when developing my own healthy banana bread.

If you compare this recipe to others you will notice it has significantly less fat in it. It uses an organic coconut oil and applesauce combination where most banana bread recipes have traditionally used butter. If you prefer to use it as a healthy banana NUT bread recipe, just add the optional nuts. My husband prefers it with the nuts and I prefer it plain. But believe me I like it both ways!

So without further ado I give you my BEST healthy banana bread recipe

7 well ripened bananas, mashed

1 1/2 cups honey

½ cup applesauce

½ cup organic coconut oil (melted)

4 eggs

2 teaspoons vanilla

4 cups self-rising flour

2 cups chopped nuts, optional

Preheat oven to 350 F

Spray bundt pan with cooking oil spray and dust with flour. This helps bread slide out of pan smoothly after baking.

Beat bananas in mixer or by hand until mashed.

Bananas should be mixed to almost puree. Very small chunks are okay.

Add honey, applesauce, coconut oil, eggs, and vanilla to mixing bowl and mix.

Add all other ingredients to mixing bowl except flour and nuts.

Add 4 cups of self-rising flour and mix. Scrap sides and mix again.

Batter after flour is mixed in. Stop and scrape sides with rubber spatula. Mix again for a few seconds

Hand stir in chopped nuts if desired. It is important to not over mix, once flour has been added (to prevent toughness).

Scrape batter into prepped bowl. It will almost reach the top!

Bake at 350 F until browned and knife comes out clean. In my gas oven that is about 1 hour & 20 min but each oven can vary slightly.

Let bread rest for about 2 minutes. Place serving dish over bread and flip bread onto dish, using pot holders.

After resting a couple minutes place serving dish over the top of bread and prepare to flip.

Flip onto plate using pot holders. Be careful not to burn yourself. Make sure your hands are not damp when touching hot dishes with potholders.

Cool to desired temperature and serve.

Or cool completely and place in air tighter bundt cake container to serve later!
